Lynden, Wash. — Chay and Lee Tan, co-owners of Coconut Kenny’s chain of pizza and sandwich restaurants announced today, January 31, 2026, that their Lynden location has changed ownership and is the first Coconut Kenny’s franchise location. The Lynden location opened in 2016.
Payton DeRuyter and Christa DeRuyter are officially the first Coconut Kenny’s franchise owners, taking ownership of our Lynden location.
Payton and Christa are not new faces to Coconut Kenny’s or Lynden. Payton is well known in the community as the longtime manager of the Lynden location, where he’s played a key role in building strong relationships with guests, staff, and local organizations.
Christa has been an integral part of our marketing and creative team and has also worked hands-on at the Lynden location—contributing both behind the scenes and on the floor.
Their deep understanding of our brand, commitment to quality and hospitality, and strong connection to the Lynden community make them a natural fit as our first franchise owners. We’re incredibly proud to see them take this next step and excited about what’s ahead at the Lynden location.
