Press release: Kiwi’s Cones brings New Zealand-style soft serve to Bellingham

BELLINGHAM, Wash. — Joey Watermeyer and Daton Nestlebush are opening Kiwi’s Cones, a mobile ice cream cart serving New Zealand-style soft serve made with real fruit, at a new permanent home base in Bellingham this summer.

The pair took over the cart, previously run under a different name, back in June. Watermeyer picked up a taste for this style of ice cream during six months living in New Zealand, where fresh fruit is blended straight into soft serve. She and Nestlebush kept the tradition alive afterward, regularly stopping for a cone at a favorite ice cream shop in Squamish, B.C., after mountain bike rides. That shared love of the treat is what pushed them to buy a cart of their own.

Every batch at Kiwi’s Cones starts with a vanilla ice cream base blended with real fruit, no syrups or dyes involved. Flavors on board include strawberry, blueberry, blackberry, and raspberry, and customers can finish their cone with sprinkles, chocolate sauce, or waffle cone chips. A vegan option made with an oat milk ice cream base is also available.

Before settling into a home base, Kiwi’s Cones tested the waters at the Northwest Tune-Up Festival, moving more than 780 cones over one weekend. That turnout helped confirm what Watermeyer and Nestlebush suspected: Bellingham had an appetite for it.

Kiwi’s Cones now operates out of Roosevelt Kulshan Brewery, known locally as K2, at 1538 Kentucky St. The cart runs 4-8 p.m. Thursday, 4-9 p.m. Friday and Saturday, and 4-8 p.m. Sunday, with the most current hours always posted on Instagram. Private event bookings are also available.

“We’re mountain bikers at heart, and some of our favorite moments are the ones after a ride: a cold beer, a smash burger, an ice cream cone, good company. Bellingham has such a strong community centered around enjoying life that way. We wanted to build something that fits right into that scene,” said [Joey/Daton], co-owner of Kiwi’s Cones.
